Description

Cooking time! Enjoy! Here's the recipe for the chicken scratch impaired.

Chicken Breast Baked Ziti

Ingredients

* 1 pk chicken breast fillets
* 1 tall can of spaghetti sauce
* ~12 oz dry penne pasta
* 2 pk Sargento Italian cheese
* Assorted seasoning
o Included but not limited to
o Franks RedHot Sauce,
o Salt
o Pepper
o Onion Powder
o Garlic Podwer
o Ground Thyme
o Ground Cumin
o Basil
o Goya Sazon seasoning packets
o Red Pepper flakes
o Parsley flakes
o Oregano
o Poultry Seasoning
* Fresh, garlic, fresh or frozen onions and bell peppers to taste. I like a lot of garlic in my food so I use 3-4 cloves, individual segments, or more if they're small. Onions, 1/2-1cup, bell pepper, something similar.

Prep

* Set oven to 350 degrees Fahrenheit

* Over medium heat, heat entire can of spaghetti sauce. Add fresh garlic (skinned and sliced), onions and bell pepper, season to taste.
o Note: I like my garlic sliced, roughly 1mm thick. Canned chopped and minced garlic is too small. If you think you can, hold the garlic in your non dominant hand and slice slowly with the blade toward you, dropped slices into the pot or into a bowl. Pull the blade through the herb, don't saw back and forth, you'll then be more likely to cut yourself.
* Stir sauce until it's simmering. Taste and re-season as necessary.
* Boil the pasta. Follow directions on package, drain and set aside.
o I prefer boiling in olive oil and adding a bit of salt to the water prior to cooking. I've had good experiences for other recipes with adding some garlic powder or fresh garlic to the water and leaving in during the cooking process.
* Season chicken breast fillets with all seasoning except for the pepper flakes and the hot sauce, unless that's your thing.Cover with clear plastic cling wrap and refrigerate or set aside.
o I clean chicken before seasoning or cooking in a bath of cold water and lemon juice. I prefer removing some of the fat from the meat. There shouldn't be too much fat on the breasts, but if you're so inclined.
o Note: never prepare raw meat in plastic containers, use pyrex, corningware or glass. Wash hands often, but that should be a given...

Assemblage!

* In a medium oven safe pan (pyrex, corningware, disposable aluminum pan) that's clean, spread a thin layer of the seasoned sauce. Evenly add on layer of cheese, roughly 1 pack.
* Lay the seasoned chicken in the pan with minimal overlap in one layer. cover with one layer of sauce.
* Add drained ziti in one even layer.
* Add the last of the sauce and more cheese, space permitting, top with aluminum foil.
o The layers can be changed as desired. I think a layer of ziti underneath the chicken would work out nicely.
* Bake in the preheated oven for about an hour covered, check. If desired remove foil and let the top brown.
* When finished, enjoy!
* Feeds 1 for 3-4 days or 3-4 for one day!
